Today we bid farewell to Manolo, our most veteran waiter. His journey has not only been long, but profoundly meaningful. He began working alongside Leopoldo, sharing moments of every kind and embodying a way of understanding the profession that has endured through the years.
For decades, Manolo has served with elegance, empathy, and a serenity that has left a lasting impression on generations of guests. He has witnessed intimate moments, family celebrations, reunions, and farewells. Each service has been a quiet celebration of craftsmanship, discretion, and human warmth.
His career has also been marked by exceptional moments: he had the honor of serving Salvador Dalí, President Josep Tarradellas, and film actors and directors such as Al Pacino, Quentin Tarantino, Oliver Stone, Kim Basinger, and Christopher Walken. All of them passed through Mare Nostrum, but were welcomed with the same dignity and warmth as any other guest.
Thank you, Manolo, for your tireless dedication and for being part of this house. You have been much more than a waiter: you have been living memory, an essential part of our history.
