The season of the Tatin cake, or apple cake, is just now beginning, a French classic that we love. The base of the cake is made of flour, butter, egg and a little sugar, caramelized apples are of the pippin type. Legend tells us that the Tatin cake was created by accident in the ‘Hotel Tatin’ at Lamotte- Beuvron , France at 1889 , the place from which the name is derived.
